WW Recipe of the Day: Whole Grain Waffles with Orange & Pomegranate

The Weight Watchers plan gave me the push I needed to change up my usual breakfast routine.

I realized I’d fallen into a rut when it came to morning meals, so this week I enjoyed whole grain waffles topped with orange (or ruby red grapefruit) and pomegranate on a couple of mornings.

Served with a steaming mug of coffee, this simple combination was a wholesome, satisfying way to start the day.

The idea came from the cookbook Weight Watchers Year Round Fresh, arranged by season and full of recipes I’m excited to try and simplify for everyday cooking.

Whole Grain Waffles with Citrus and Pomegranates — Notes

I simplified the original recipe. It called for homemade buttermilk waffles, which isn’t practical for many weekday mornings — and I don’t own a waffle iron. Instead I used frozen whole grain waffles that were already in my freezer from a previous recipe.

If you prefer to make waffles from scratch, that will work beautifully. I substituted ruby red grapefruit when I didn’t have oranges on hand; either citrus is great here.

With a light drizzle of maple syrup these waffles are a treat. Per serving this version comes in at about 284 calories and:

Whole Grain Waffles with Orange & Pomegrante

Frozen whole grain waffles topped with orange (or grapefruit) and pomegranate, finished with a light drizzle of maple syrup — a wholesome, flavorful breakfast.

Ingredients 

  • 2 frozen whole grain waffles (such as Kashi)
  • 1 medium orange or ruby red grapefruit
  • 2 tablespoons pomegranate arils (seeds)
  • 2 teaspoons pure maple syrup, warmed

Instructions 

  • Toast the waffles according to package directions.
  • While the waffles warm, prepare the citrus: slice off the top and bottom, stand the fruit upright and cut away the peel and pith from top to bottom. Slice into rounds and halve or quarter each round.
  • Top the waffles with the citrus pieces and pomegranate arils, then drizzle with warmed maple syrup. Serve immediately.
