Ingredients

BARS

  • 1 cup persimmon pulp (about 2–3 ripe persimmons)
  • 1 tsp baking soda
  • 1 egg, beaten
  • 2/3 cup sugar
  • 1/2 cup coconut oil, melted but not hot
  • 1/2 cup raisins
  • 1 1/2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 3/4 tsp salt
  • 1/8 tsp ground cloves
  • 3/4 tsp vanilla extract
  • 1 cup chopped walnuts (optional)

LEMON GLAZE

  • 1 cup confectioner’s sugar
  • 2 tbsp lemon juice

Instructions

TO PREPARE THE BARS

  • Preheat the oven to 350°F. Lightly grease a 10 x 15-inch jelly roll pan.
  • In a small bowl, combine the persimmon pulp and baking soda; set aside.
  • In another small bowl, mix the beaten egg, sugar, melted coconut oil, vanilla, and raisins.
  • In a large bowl, whisk together the flour, cinnamon, nutmeg, cloves, and salt.
  • Stir the persimmon mixture briefly, then add it to the flour mixture. Add the egg mixture and stir until just combined. Fold in walnuts if using.
  • Spread the batter into the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, about 20 minutes. Let the bars cool for 15–30 minutes before glazing.

TO PREPARE THE LEMON GLAZE

  • Whisk the confectioner’s sugar and lemon juice together until smooth and fully combined. Spread the glaze over the slightly cooled bars and allow it to set before slicing.
