This appetizer is irresistible. These Shrimp with Pesto and Prosciutto make an elegant, flavorful starter for a dinner party or a relaxed evening with a glass of wine and friends. With warmer weather calling for casual get-togethers, they’re a perfect excuse to gather on the deck and enjoy the season.

I have a confession: many years ago I worked as a server at a local yacht club. At the Commodore’s wedding during cocktail hour, the passed hors d’oeuvres included all the classics—bacon-wrapped scallops, canapés—and the most unforgettable bite: jumbo shrimp coated in pesto and wrapped in prosciutto.

I had to try one. A friend and I slipped a few into the ladies’ locker room to sample them away from our boss. That first bite was revelation—rich, savory, and totally addictive. Hungry and curious, we ended up sneaking an entire tray back there. Teenagers being teenagers, we loved every decadent bite.

Years later I still don’t regret that moment, and I finally recreated the dish at home. While jumbo shrimp would be ideal, more affordable large Argentine shrimp work beautifully and keep the recipe budget-friendly.

This recipe is incredibly simple and takes just 10–15 minutes from start to finish. It’s an ideal appetizer for girls’ night, a dinner party, or any gathering where you want an impressive bite without fuss. I used jarred pesto to keep things easy, but homemade pesto would only improve the flavor. Either way, pop these into the oven and serve hot—you won’t regret it.
