
This easy hollandaise is made in the microwave and is the quickest way to prepare a homemade hollandaise from scratch. Fast, simple, and delicious.
I tested many versions and found a strong lemon flavor in most recipes that I didn’t care for. After some experimenting I replaced lemon with a little vinegar for a milder, more balanced tang. This version is prepared entirely in the microwave and tastes amazing. Serve it over poached eggs or steamed vegetables for an indulgent breakfast or brunch.
Ingredients:
- 1 egg yolk
- 2 tbsp butter, melted
- 2 tbsp heavy cream
- 1 tsp vinegar
- 1/8 tsp Dijon mustard
- Salt and cayenne pepper, to taste
How to Make Easy Hollandaise Sauce Step-by-Step :
1. Place the butter in a microwave-safe bowl and melt it (about 30 seconds). Add the egg yolk, then stir in the vinegar and the cream until fully combined.
2. Microwave the mixture for up to one minute, stopping every 15 seconds to check and stir. The sauce will thicken as it heats.
3. If the sauce looks slightly curdled, continue whisking — it will smooth out as the ingredients emulsify.
4. Whisk in the Dijon mustard and salt, then garnish with a pinch of cayenne pepper before serving.
Tip: For a thinner hollandaise, stir in an additional tablespoon of melted butter. This sauce reheats well; warm gently and whisk before serving.
