Ingredients

  • cup Parmigiano Reggiano, freshly grated, plus extra shaved for topping
  • 1 ½ large lemon, zest of 1 and the juice of 1 ½ lemons
  • 1 ½ tbsp honey
  • 1 ½ tsp Dijon mustard
  • Salt, to taste (seasoned salt works well)
  • cup olive oil, plus 2 tbsp if needed
  • 1 fennel, shaved
  • 5 oz arugula, about 1 container

Instructions

  • In a bowl combine freshly grated Parmigiano, lemon zest, lemon juice, honey, Dijon mustard, and salt. Whisk while slowly streaming in the olive oil to emulsify. Let the dressing rest 15–20 minutes.
  • While the dressing melds, shave the fennel and squeeze a little lemon on it to prevent browning.
  • Combine arugula and shaved fennel in a large bowl. Using clean hands, massage the dressing into the greens until evenly coated and slightly wilted to your liking.
  • Finish with extra shaved Parmigiano and serve immediately.
