Because the recipe uses so few ingredients, choose the best cherries you can find. Tart Morello cherries are an excellent choice; they can be used fresh or frozen. If you buy fresh cherries you will need to pit and freeze them first. The slight acidity of Morello cherries gives the yoghurt a light, refreshing quality that balances sweetness and keeps the flavour lively.

There are two tasty variations you can make: a perfectly smooth frozen yoghurt or a version with cherry pieces. For a chunky texture, reserve about a quarter of the cherries and add them to the blender or food processor in the final few seconds. They will break up slightly and fold into the yoghurt, creating pleasant bursts of fruit in each spoonful.
