This salted caramel cookie pie is a soft, gooey chocolate chip cookie with a warm, melting salted caramel center. Both the caramel and the cookie dough are made from scratch, yet the process is straightforward and quick. Follow the instructions below and you’ll have a stunning dessert with minimal effort.

How to make the Salted Caramel Cookie Pie
Start by making the salted caramel sauce. It requires only a few ingredients: butter, brown sugar and milk. Melt the butter with the brown sugar over medium-high heat, add the milk and bring the mixture to a boil. Let it boil for at least two minutes—the longer it cooks, the darker and richer the caramel becomes. Stir in salt to taste, then set the caramel aside to cool.

Partially melt the butter. -

Combine sugar, brown sugar and melted butter. -

Add eggs and vanilla, then beat together. -

Stir in flour and baking powder. -

Fold in the chocolate chips. -

Press half the dough into the pie dish base. -

Spread the salted caramel over the dough. -

Top with the remaining cookie dough and bake.

The cookie dough is a straightforward mix that you divide in two. Press one half into the bottom of a greased pie dish, pour the cooled salted caramel over it, then cover with the remaining dough. The dough is sticky, so working in small pieces and flattening them before placing them on top makes it easier to assemble.

Salted Caramel Cookie Pie
Ingredients
Salted Caramel Sauce;
- ½ Cup Brown Sugar (110g)
- ¼ Cup Butter, Melted (55g)
- 3 Tbsp. Milk
- ½ – 1 teaspoon Salt
Cookie Pie;
- ¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
- ¾ Cup Brown Sugar (150g)
- ½ Cup Sugar (100g)
- 2 teaspoon Vanilla Extract
- 1 Tbsp. Golden Syrup (22g)
- 2 Large Eggs
- 2 and ¾ Cups All Purpose Flour (340g)
- 1 teaspoon Baking Powder
- 1 Cup Chocolate Chips (180g)
- Sea Salt to garnish
Instructions

To make the salted caramel:

Place the butter and brown sugar in a saucepan over medium-high heat.

Once the butter has melted, add the milk and bring to a boil.

Boil for at least 2 minutes, then remove from the heat.

Stir in the salt and allow the caramel to cool.
Cookie Pie;

Preheat the oven to 180°C (350°F) and grease a 9″ / 20cm round pie dish.

Beat the very soft or partially melted butter with the brown sugar and sugar until combined.

Beat in the eggs one at a time.
-
Add the vanilla extract and golden syrup and mix well.

Stir in the flour and baking powder until combined.

Fold in the chocolate chips.

Spread half the cookie dough in an even layer across the base of the prepared dish.

Pour the cooled salted caramel over the dough.

Top with the remaining cookie dough, working in small pieces if needed.

Bake for 20–25 minutes. The center should still wobble slightly while the edges turn golden.

Allow the pie to cool completely before slicing so the caramel sets and doesn’t run everywhere.
