Cheese-stuffed portabella mushrooms are one of my go-to sides. The combination of creamy cheeses and grilled mushroom makes a simple, flavorful dish that’s perfect for weeknight dinners or summer barbecues.

When I make these I like to pair them with other fresh dishes. Fresh mozzarella and feta add great texture and flavor — and let’s be honest, mozzarella is delicious by itself as a snack.
Cheese Stuffed Portabella Mushrooms — Ingredients
- Large portabella mushrooms
- Mozzarella cheese
- Olive oil
- Minced garlic
- Feta cheese
- Pink Himalayan salt
- Fresh ground black pepper
- Steak seasoning
How to grill portabella mushrooms
1. Prepare the mushrooms. Remove the stems from large portabellas and wipe the caps clean.
2. Stuff with cheese and garlic. Spoon feta into the mushroom cavity and add minced garlic to taste.
3. Top with mozzarella. Place a slice of mozzarella on each mushroom and tuck smaller pieces around the edges to fill gaps.
4. Season. Drizzle with olive oil, then season with salt, fresh ground pepper, and steak seasoning to taste.

5. Grill. Heat your grill to medium and place the mushrooms on the upper rack or a cooler part of the grill to prevent burning.
6. Cook until melted. Grill until the cheeses are fully melted and the mushroom is tender — about 20–30 minutes depending on heat and mushroom size. I cooked mine about 25 minutes.

7. Serve and enjoy. These mushrooms make a satisfying side or a light main for a vegetarian meal.
We made quite a feast that night!
