In college I made Chicken Marsala again and again for roommates. After years without making it, I updated the classic into a simpler slow cooker version. This low-carb slow cooker Chicken Marsala is rich, hearty, full of flavor, and very easy to prepare.

Tips For Perfect Slow Cooker Marsala

The recipe is basically dump-and-cook, but a few simple steps will improve texture and flavor.

– Brown the chicken.

Although the recipe works without browning, searing chicken breasts first (in 2 tbsp olive oil over medium-high heat, about 3 minutes per side until golden but not cooked through) adds depth and a richer flavor.

– Brown the mushrooms.

Sauté mushrooms briefly in butter to caramelize them before adding to the slow cooker. This enhances their taste significantly.

– Whisk the sauce well before finishing.

When adding the cream, remove the chicken and whisk the sauce thoroughly to blend it smoothly. Vigorous whisking helps prevent the cream from separating and yields a silkier sauce. This step is optional but recommended for the best texture.

Easy One Pot Slow Cooker Creamy Chicken Marsala is a hearty, delicious low carb chicken dinner – perfect for keto and paleo meal prep. Serve it on its own or with your favorite sides.
Chicken breasts with mushrooms in a creamy sauce, garnished with herbs, cooked to perfection for an easy low carb slow cooker creamy chicken marsala.

Ingredients

  • 4 chicken breasts, around 8 oz each
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup dry Marsala wine
  • salt and pepper, to taste
  • ½ cup heavy whipping cream

Instructions

  • Lightly oil the base of the slow cooker and spread it around.
  • Place the chicken breasts in the bottom of the slow cooker.
  • Layer the sliced mushrooms over the chicken, season with salt and pepper, and pour the Marsala wine on top.
  • Cover and cook on high for 3–4 hours, or until the chicken reaches an internal temperature of about 155°F (slow cooker times vary).
  • Remove the chicken and mushrooms and set aside.
  • Stir the heavy cream into the cooking liquid and whisk vigorously until the sauce thickens and becomes smooth.
  • Return the chicken and mushrooms to the slow cooker, cover, and cook an additional 20–30 minutes until the chicken reaches 165°F internal temperature.
  • Serve and enjoy!
