I also enjoy creating new baked oatmeal flavors, and my latest favorite is Peanut Butter Banana Berry Baked Oatmeal. The name is long, but it’s a true description of a delicious, satisfying breakfast.

Oatmeal is one of the best breakfasts in my opinion, and I could eat it every day. This baked version delivers complex carbohydrates and more staying power than a plain bowl, especially when you add wholesome toppings or mix-ins. If a typical serving of oatmeal doesn’t keep you full, try this recipe — it’s hearty, nourishing, and perfect for meal prep.

Ingredients needed for Peanut Butter Banana Berry Baked Oatmeal…

This easy vegan breakfast is made with simple, wholesome ingredients and is ideal for meal prep. It’s quick to prepare and makes tasty breakfasts all week long.

  • Bananas: Naturally sweeten the bake. Use 2 ripe bananas.
  • Peanut Butter: 1/4 cup creamy peanut butter adds flavor and healthy fats to keep you satisfied.
  • Oats: 2 cups old-fashioned oats provide the base and texture.
  • Almond Milk: 3/4 cup unsweetened vanilla almond milk (or any milk you prefer).
  • Blueberries: 1/2 cup fresh or frozen berries, or swap for your favorite berry.
  • Vanilla Extract: 1 tsp for depth of flavor.
  • Cinnamon: 1 tsp plus extra for sprinkling on top.
  • Baking Powder: 2 tsp to give the bake a light rise.
  • Salt: A pinch to balance and enhance the flavors.

You’ll need only basic kitchen tools for this recipe!

The tools required are minimal and probably already in your kitchen:

  • large mixing bowl
  • measuring spoons and cups
  • liquid measuring cup
  • 8×8 baking dish (greased)
  • mixing spoon and basic utensils

How to make this healthy breakfast recipe..

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, mash the bananas. Add the peanut butter, almond milk, and vanilla extract, stirring until smooth and combined.

3. Stir in the oats, baking powder, cinnamon, and a pinch of salt until evenly mixed.

4. Gently fold in the blueberries.

5. Transfer the mixture to a greased 8×8 baking dish, spreading it evenly. Top with additional blueberries and a light sprinkle of cinnamon if desired.

6. Bake for about 20 minutes, until set and lightly golden on top.

7. Allow to cool, cut into squares, and enjoy warm or chilled.

How to store…

Store the baked oatmeal in an airtight container in the refrigerator. Let it cool completely before sealing. Properly stored, it will keep for about one week.

Ingredients

  • 2 bananas
  • 1/4 cup peanut butter
  • 3/4 cup almond milk
  • 1 tsp vanilla extract
  • 2 cups oats
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • pinch of salt
  • 1/2 cup blueberries

Instructions

  1. Set the oven to 400 degrees.
  2. In a large mixing bowl mash the bananas. Add in the peanut butter, almond milk, and vanilla extract. Combine evenly.
  3. Add in the oats, baking powder, cinnamon, and salt. Combine.
  4. Stir in the blueberries.
  5. Transfer the oatmeal mixture to a greased 8×8 baking dish. Spread evenly and top with more blueberries and a sprinkle of cinnamon.
  6. Bake for 20 minutes.
  7. Let cool, cut into slices, and enjoy!
