Total Time: 1 hour 25 minutes
Servings: 1 loaf

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup oil
  • 3/4 cup brown sugar
  • 2 eggs , beaten
  • 2 cups mashed bananas
  • 2/3 cup pecan or walnut pieces (optional)
  • 2/3 cup chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan. Sprinkle 1 tablespoon of flour into the pan and shake to coat the greased surface—this helps the bread release easily after baking.
  • In a bowl, sift together the flour, baking soda, and salt. Set aside.
  • In a separate large bowl, combine the oil, brown sugar, and beaten eggs until smooth. Stir in the mashed bananas. Gently fold the dry ingredients into the wet mixture until just moistened. If using nuts or chocolate chips, fold them in at the end. Avoid overmixing to keep the bread tender.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 65–75 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Remove the loaf from the oven and let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
