Ingredients
- 3 large red bell peppers destemmed, deseeded, and membrane removed
- 1 tbsp olive oil plus extra for baking
- 1 cup cauliflower rice cooked, cooled, and drained (or regular cooked rice)
- 2 cloves garlic minced
- 1 small yellow onion finely chopped
- 1 lb ground Italian sausage
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp Italian seasoning
- 8 oz tomato sauce
- 1 1/2 cups shredded Mozzarella cheese divided
Instructions

Preheat oven to 375°F (190°C).

Rub the inside and outside of the peppers lightly with olive oil and place them upside down in a baking dish or on a sheet pan.
