Crispy Egg Roll Soba Noodle Bowl with Sesame Ginger Sauce

I spent a year living in Japan after college and discovered a love for soba noodles there. I also adore the savory profile of egg rolls, but I rarely have time for the frying and assembly they require. This stir-fry noodle bowl blends those two favorites into a simple, satisfying dish you can prepare in about 20 minutes.

Egg Roll Soba Noodle Bowl Ingredients:

  • Two 4.48-ounce packages of Fortune Gluten-Free Soba Buckwheat Noodles, Shoyu flavor
  • 1 pound natural ground pork (or ground turkey)
  • 1 16 oz. bag coleslaw mix (shredded cabbage and carrots)
  • 2 cloves garlic, minced
  • About 2 inches fresh ginger, grated
  • 3 scallions/green onions, sliced (separate whites and greens)
  • Olive oil for sautéing
  • 1 1/2 Tbsp toasted sesame oil
  • 1 Tbsp soy sauce, optional to taste
  • Sesame seeds, optional for garnish

Two time-saving shortcuts make this dish especially quick: a bag of pre-shredded cabbage and carrots, and Fortune brand shelf-stable gluten-free soba buckwheat noodles (shoyu flavor). These noodles come with flavor packets that are handy for seasoning the stir fry.

I developed this recipe after trying several of Fortune’s gluten-free noodle flavors. They’re tasty on their own and work very well as the base for a quick stir fry with vegetables and ground meat.

How to Make this Stir Fry Noodle Bowl:

  • Prep: mince garlic, grate ginger, and slice scallions separating whites from greens.
  • Heat a large skillet over medium-high and add a drizzle of olive oil.
  • Sauté the garlic, grated ginger and the white parts of the scallions for about 1 minute until aromatic.
  • Add the ground pork, break it up, and cook until no longer pink.
  • While the pork cooks, bring a pot of water to a boil. When boiling, reduce to a simmer and add the soba noodles (reserve the flavor packets). Cook 3 to 3½ minutes, then drain and rinse briefly.
  • In the skillet with the meat, add the bagged coleslaw mix and stir for about 3–4 minutes until slightly softened.
  • Stir in the two Fortune noodle flavor packets and the toasted sesame oil, then add the cooked, drained noodles. Toss everything together until well combined and heated through.
  • Serve in bowls and garnish with the green parts of the scallions and sesame seeds. Add soy sauce to taste if desired.

This stir fry is one of my favorite quick dinners — easy to scale, adaptable (swap pork for turkey or a plant-based protein), and ready in about 20 minutes.

Ingredients

  

  • 2 4.48 ounce packages Fortune Gluten-Free Soba Buckwheat Noodles, Shoyu Flavor
  • 1 pound natural ground pork (or ground turkey)

  • sesame seeds (for garnish)
  • 1 Tbsp soy sauce (if desired, for taste)

Instructions

 

  • Mince the garlic, grate the ginger and slice the scallions, keeping whites and greens separate.
  • Heat a splash of olive oil in a large skillet over medium-high heat.
  • Sauté the garlic, ginger and scallion whites for about 1 minute until fragrant.
  • Add the ground pork, break it up, and cook until no pink remains.
  • Bring a pot of water to a boil while the meat cooks.
  • Stir the coleslaw mix into the skillet and cook about 4 minutes until slightly softened.
  • When the water boils, reduce to a simmer and add the soba noodles (reserve the flavor packets). Cook 3–3½ minutes, then drain and rinse.
  • Add the two flavor packets and the toasted sesame oil to the skillet and stir to combine.
  • Toss in the cooked noodles and stir until everything is evenly coated and heated through.
  • Serve in bowls and garnish with scallion greens and sesame seeds. Add soy sauce if desired.
