Game day just got a whole lot tastier with these loaded buffalo chicken fries. They’re a shareable, flavor-packed appetizer: crispy fries piled with shredded chicken tossed in tangy buffalo sauce, melted mozzarella, blue cheese crumbles, and a drizzle of creamy ranch. Simple to assemble and crowd-pleasing, they’re sure to be requested again and again.

🍟 What Makes This Recipe So Good
- These buffalo chicken fries are loaded with complementary flavors: tangy buffalo sauce, creamy ranch, bold blue cheese, and gooey mozzarella layered over a bed of your preferred fries.
- Because most ingredients are pantry or freezer staples, this dish is quick to prepare and budget-friendly. You can likely assemble a batch with items already in your kitchen.
- Perfect for tailgates, game day, movie nights, or parties. They also adapt easily to single-serving portions for an easy dinner.
👩🏼🍳 Chef’s Tips
- Use any cooked chicken you prefer—homemade shredded chicken or store-bought rotisserie both work well. Be sure to shred or chop the meat into small, bite-sized pieces so it distributes evenly over the fries.
- Choose a sturdier fry (avoid delicate shoestring styles) so the fries hold up under the toppings and don’t turn soggy. You’re stacking cheese, chicken, and two sauces, so a heartier fry maintains good texture.
- The recipe includes an easy homemade buffalo sauce that tastes like classic wing sauce. If you’re short on time, a quality store-bought buffalo sauce will also work.

Instructions
-
Preheat oven to 400° Fahrenheit.
-
Combine ¼ cup Louisiana-style hot sauce, ¼ cup unsalted butter, 1 tablespoon white vinegar, ¼ teaspoon Worcestershire sauce, ⅙ teaspoon garlic powder, ⅙ teaspoon paprika, salt, and freshly cracked black pepper in a medium saucepan. Heat over medium-low.

Whisk until the sauce begins to simmer and the butter is fully melted. Taste and adjust seasoning if needed.

Spread cooked fries from a 32-ounce bag evenly across the bottom of a baking pan. Top with 8 ounces shredded mozzarella and the prepared buffalo chicken, distributing evenly.

Bake in the preheated oven 5 minutes or until the mozzarella is melted, then remove carefully.
-
Sprinkle ⅓ cup blue cheese crumbles and ⅓ cup sliced green onions over the melted cheese. Just before serving, drizzle ⅓ cup ranch dressing and serve warm; optional romaine makes a nice bed for serving.
Notes
- Buffalo Sauce: A store-bought sauce can be substituted if you prefer convenience.
- Chicken: Use cooked chicken prepared for this recipe, leftover chicken, or rotisserie. Shred or chop into small pieces for easy eating.
- Vegetarian option: Omit Worcestershire sauce and replace the chicken with roasted cauliflower florets or cooked tofu.
