I absolutely love Girl Scout cookie season. The first time I ran into a Girl Scout table at my favorite brewery this year, I was in line immediately — and I picked up a box of every cookie I could. I may also have grabbed two boxes of the Caramel deLites. 😏

This apple salad was inspired by Jenna Lives Well, who shared a version on Instagram using Girl Scout cookie crumbles in an apple salad. I wanted to recreate the same flavor profile using whole, wholesome ingredients for a fit-foodie twist. The result captures the cookie’s caramel and chocolate notes with apples, dates, peanut butter, shredded coconut, and mini chocolate chips for the crunch and sweetness.

Caramel deLites Apple Salad (In a Jar!)

This Caramel deLites apple salad blends the flavors of a favorite Girl Scout cookie with a classic Midwestern apple salad.

Ingredients

  • 1 Granny Smith apple, chopped into small chunks
  • cup plain Skyr or Greek yogurt
  • 1 tablespoon all-natural maple syrup
  • 2 tablespoons unsweetened shredded coconut
  • 3 dates, pitted and chopped
  • 2 tablespoons mini chocolate chips
  • 1 tablespoon creamy peanut butter

Instructions

  • Add all ingredients to a large mason jar or mixing bowl. Secure the lid and shake, or stir thoroughly, until every piece of apple is coated with the yogurt-maple-peanut butter mixture.
  • Top with any extra shredded coconut, chocolate chips, or chopped nuts as desired, then serve immediately or refrigerate for later.

Tips & Notes

  • Granny Smith apples add a pleasant tartness that balances the sweetness of the dates and chocolate, but any crisp apple will work.
  • Adjust the peanut butter and maple syrup to taste for more or less sweetness and richness.
  • This salad stores well covered in the refrigerator for up to 2 days; store dressing separately if you prefer firmer apples.
