It may sound unusual at first, but once baked with sauce and cheese these taquitos transform into something that tastes like a restaurant-style enchilada. Serve with sour cream and simple fresh toppings — shredded lettuce, diced tomato, sliced jalapeño, or avocado — and you can customize each plate to suit everyone’s tastes.

Frozen Taquito Enchilada Casserole
- 1 (20-pack) frozen taquitos (chicken or beef)
- 1 (16 oz) can refried beans (optional)
- 1 (19 oz) can enchilada sauce (red or green)
- 2 cups shredded cheese (Mexican blend or cheddar)
- Sour cream for serving

Step 1 Preheat the oven to 400°F and grease a 9×13-inch baking dish. Scoop the refried beans into the bottom of the dish and spread them evenly with the back of a spoon.

Step 2 Arrange the frozen taquitos in a single layer over the beans. Turn four of them the opposite direction so they cover more surface area.

Step 3 Pour the enchilada sauce evenly over the taquitos and bake at 400°F for 20 minutes.

Step 4 Remove the dish from the oven and sprinkle about 2 cups of shredded cheese over the top. A Mexican cheese blend melts nicely, but cheddar works too.

Step 5 Return the casserole to the oven for about 5 minutes, until the cheese is melted and gooey.

Step 6 Serve with sour cream and any optional toppings you enjoy: guacamole, shredded lettuce, diced tomato, sliced jalapeño, or a squeeze of fresh lime.
