Ingredients

  • 3 large red bell peppers destemmed, deseeded, and membrane removed
  • 1 tbsp olive oil plus extra for baking
  • 1 cup cauliflower rice cooked, cooled, and drained (or regular cooked rice)

  • 1 lb ground Italian sausage

  • Flip the roasted peppers upright and stuff with the filling. Sprinkle the tops with the remaining 3/4 cup mozzarella.
