Gluten-Free White Chocolate Blondies Recipe for Chewy, Fudgy Bars

gluten free white chocolate blondies cut into square bars and stacked on each other with walnuts and white chocolate chips spread around them

These gluten-free white chocolate blondies are quick and simple to make, perfect for bringing to a gathering or enjoying at home. They have the chewy, dense texture of a classic blondie and get extra richness and sweetness from white chocolate chips and a pleasant crunch from chopped walnuts.

Before I adopted a gluten-free diet, one of my go-to desserts was the blondie from Applebee’s. This recipe produces a similar texture, and I love adding white chocolate chips — I often use Trader Joe’s when they’re available — for a truly indulgent treat.

How do I make blondies from scratch?

Making these gluten-free white chocolate blondies from scratch is straightforward. Combine the dry ingredients in one bowl, blend the wet ingredients in another, then fold them together. Stir in white chocolate chips and chopped walnuts, spread the batter in a prepared pan, and bake until golden and set. The process is quick and beginner-friendly.

Gluten Free White Chocolate Blondies Supplies

You’ll need a mixing bowl, whisk or stand mixer, a small saucepan to melt the butter, a 9×13-inch baking pan lined with parchment or greased, and a spatula for spreading the batter.

What are blondies?

Blondies are essentially brownies without cocoa. They have a dense, chewy crumb and are typically flavored with brown sugar and vanilla. Adding white chocolate chips and nuts makes them even more satisfying.

Can you freeze blondies?

Yes. These blondies freeze well for several days. I often freeze extras and pull them out to pack in lunches or to have a ready treat on busy days. Wrap them tightly or store in an airtight container for best results.

I source many ingredients online and at specialty stores. Choosing a reliable gluten-free flour blend and good-quality white chocolate chips will improve texture and flavor.

Description

These gluten-free white chocolate blondies are chewy, flavorful, and easy to make. Brown sugar and vanilla give them a rich caramel note while white chocolate chips and walnuts add sweetness and texture. They’re a reliable crowd-pleaser.

Ingredients

½ cup Unsalted Butter, melted
½ cup Brown Sugar
1 Tbsp Vanilla Extract
2 large Eggs
1 ½ cups Gluten Free Flour
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Sea Salt
¾ cup White Chocolate Chips
1 cup Walnuts, chopped

Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or coconut oil, or line it with parchment paper.

In a bowl, whisk together the gluten-free flour, baking soda, baking powder, and sea salt. Set aside.

In a small saucepan, melt the butter over low heat. Stir in the brown sugar until blended and slightly dissolved. Transfer this mixture to a mixing bowl or the bowl of a stand mixer.

Add the vanilla extract and eggs to the butter-sugar mixture and mix until smooth.

Fold the dry ingredients into the wet ingredients until just combined. Gently stir in the white chocolate chips and chopped walnuts.

Spread the batter evenly in the prepared 9×13 pan, pressing it down with a spatula.

Bake at 350°F for 20–25 minutes, or until the top is golden brown and a toothpick inserted near the center comes out with a few moist crumbs.

Allow the bars to cool completely in the pan before cutting into squares.

Notes

My favorite white chocolate chips are from Trader Joe’s when they’re available in season. If you prefer, omit the walnuts or swap them for pecans. For firmer, more defined bars, chill the pan briefly before slicing.
