I am so excited about this Holiday Recipe Exchange—after all, I’m a devoted fan of butter.
It’s almost funny how much butter I keep in my refrigerator and how often I rely on it in recipes for My Baking Addiction.

Pumpkin Butter Cake
Yield: 24 servings

Ingredients:
For the Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
For the Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons unsalted butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
Directions:
1. Preheat the oven to 350°F.
2. In a bowl, combine the cake mix, egg, and melted butter. Mix well with an electric mixer and press the batter into the bottom of a lightly greased 13 x 9-inch baking pan.
3. For the filling: Beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and melted butter and beat until combined. Stir in the powdered sugar, cinnamon, and nutmeg, mixing well.
4. Spread the pumpkin filling over the cake batter and bake for 40 to 50 minutes. The center should remain slightly gooey—avoid overbaking.
5. Serve slices topped with fresh whipped cream.
